  • For thinner crème fraîche: Refrigerate the crème fraîche as soon as it reaches your preferred consistency. Use it quickly, as it will thicken further in the fridge.
  • For thicker crème fraîche: Leave it in the fridge for at least one day after incubation. The longer it chills, the thicker it will get.
